2 medium zucchini, grated
½ teaspoon kosher salt
2 eggs
½ cup all-purpose flour (or use chickpea flour for gluten-free)
¼ teaspoon baking powder
¼ cup finely chopped scallions or chives
¼ cup shredded Parmesan cheese

Neutral oil for frying (like avocado or canola)
Instructions
Salt and drain zucchini: Toss grated zucchini with salt and let sit in a colander for 10 minutes. Squeeze out as much liquid as possible using a clean towel.
Mix batter: In a bowl, whisk eggs, flour, baking powder, scallions, Parmesan, and seasoning. Fold in the zucchini.
Cook fritters: Heat 2–3 tablespoons oil in a skillet over medium heat. Drop batter by spoonfuls and flatten slightly. Cook 3–4 minutes per side until golden brown and crisp. Drain on paper towels.
