High-Protein Marry Me Chicken with Greek Yogurt

Ingredients (Serves 4)

2 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 tablespoon butter
1 1/2 teaspoons Shawhan Farms Classic Poultry Seasoning
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1 cup low-sodium chicken broth
1 cup plain Greek yogurt
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
1/2 teaspoon red pepper flakes (optional)
1/2 cup fresh basil, torn

Directions

1. Pat the chicken dry and season both sides with salt, pepper, and Shawhan Farms Classic Poultry Seasoning.

2. Warm the olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 4 to 5 minutes per side, until well browned. Transfer to a plate.

3. In the same skillet, add the garlic and cook briefly, just until fragrant. Pour in the chicken broth and add the sun-dried tomatoes, scraping up the browned bits from the pan.

4. Reduce the heat to low and whisk in the Greek yogurt and Parmesan until smooth.

5. Return the chicken to the skillet and spoon sauce over the top. Cover and simmer 8 to 10 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

6. Remove from heat and fold in the basil just before serving.
