Sheet-Pan Spatchcock Chicken with Veggies & Lemon Parmesan Pan Sauce
A whole roasted chicken, flattened for even cooking, nestled over a bed of carrots, potatoes, and red onions—finished with a bright, buttery pan sauce infused with Shawhan Farms Lemon Pepper Parmesan Seasoning. Ingredients
- 1 whole chicken (3.5–4 lbs), spatchcocked
- 2 tbsp unsalted butter, softened
- 1 tbsp olive oil
- 2 tsp Shawhan Farms Poultry Seasoning
- Salt & black pepper to taste
- 1 lemon, halved
- 1 red onion, cut into wedges
- 2 carrots, cut into thick rounds
- ½ lb baby potatoes, halved
- ½ cup low-sodium chicken broth
- 2 tbsp Shawhan Farms Lemon Pepper Parmesan Seasoning
Instructions
- Preheat & Prep: Heat oven to 425°F. Arrange carrots, potatoes, onion wedges, and lemon halves on a parchment-lined sheet pan.
- Spatchcock the Chicken: Use kitchen shears to cut along both sides of the backbone and remove it. Flip the bird breast-side up and press down firmly until it flattens. This helps reduce cooking time, promotes even browning, and allows the vegetables to roast more evenly beneath the bird.
- Season & Roast: Pat chicken dry. Mix butter, oil, and Poultry Seasoning into a paste and rub under the skin and all over the surface. Season with salt and pepper. Lay chicken skin-side-up on top of the vegetables. Roast for 45–50 minutes, or until a thermometer inserted into the thickest part of the thigh reads 165°F.
- Rest & Finish: Let the chicken rest for 10 minutes before carving. Squeeze the roasted lemon over the veggies and gently toss.
- Make the Sauce: Pour pan juices and chicken broth into a small skillet. Simmer for 2–3 minutes, then stir in the Lemon Pepper Parmesan Seasoning until fully dissolved. Spoon the warm sauce over the sliced chicken.
