Sheet-Pan Chorizo Breakfast Hash

Sheet-pan breakfasts are a favorite for good reason: they make prep and cleanup easy, especially when cooking for a group. This version gets a flavor boost from Shawhan Farms Traditional Chorizo Seasoning, bringing smoky depth to sausage, potatoes, and veggies. Great with chicken, turkey, or pork sausage, or a plant-based alternative—either way, the flavor holds its own.
Ingredients
- 1 lb breakfast sausage (or shake things up with sliced brats or Italian style)
- 3 cups diced potatoes (Yukon gold or red), par-boiled until just tender
- 1 large red bell pepper, diced
- 1 small yellow onion, diced
- 2 tbsp olive oil
- 1½ tsp Traditional Chorizo Seasoning
- Salt & pepper, to taste
- Optional: 4 eggs, smoked paprika, cilantro or chives for garnish
Instructions
Oven Method
- Preheat oven to 400 °F. Line a sheet pan with parchment.
- In a large bowl, toss potatoes, sausage, peppers, and onion with olive oil, seasoning, and a pinch of salt.
- Spread evenly on the sheet pan. Roast 25–30 minutes, stirring once, until potatoes are crisp and golden.
- (Optional) Make four small wells, crack in the eggs, and return to oven for 5–7 minutes until just set.
- Garnish with herbs and serve.
Stovetop Method
- Heat olive oil in a large skillet over medium. Add potatoes and seasoning; cook 8–10 minutes.
- Add sausage, peppers, and onions; continue cooking 8–10 minutes until browned and tender.
- Fry eggs to preference and top with herbs.
