Ingredients

1 tablespoon oil
1/2 pound ground turkey or chicken (optional)
1 small onion, diced
1 bell pepper, chopped
2 cloves garlic, minced
1 (15-ounce) can black beans, drained
1 cup corn (frozen or canned)
1 (14.5-ounce) can diced tomatoes, undrained
1 tablespoon Shawhan Farms Dry Mole Sauce Mix
1/4 cup broth or water
Salt and pepper to taste
Cooked rice or warm tortillas, for serving
Lime wedges, shredded lettuce, or cheese, if available

Instructions

Heat the oil in a large skillet over medium heat. Add the turkey or chicken if using and cook until browned, then set aside.

Add the onion, bell pepper, and garlic to the same pan. Cook until soft and fragrant.

Stir in the black beans, corn, and tomatoes. Add the mole mix and broth or water, then stir to combine.

Return the meat to the pan if using and let everything simmer for about 10 minutes, until thickened and flavorful.

Taste and season with salt and pepper. Serve over rice or spoon into tortillas. Add lime, lettuce, or cheese if you have them.
