How do you make leftover potatoes the star of the meal? Season them well, then crisp them in a skillet. Taco seasoning gives them chile, garlic, onion, and savory depth, so a simple pan of potatoes and eggs turns into a filling meal with very little else.
This is a good budget-stretch recipe because it starts with potatoes you already cooked, then uses eggs to round things out. Breakfast is one easy answer, but the same skillet works for lunch or breakfast-for-dinner too.
That is also where our Beau’s Original Taco Seasoning stands apart from a packet. Like all of our blends, it is chef-inspired, small-batch filled, and made with premium ingredients. You still get that familiar taco flavor, but with a cleaner, more balanced profile that works well beyond taco night.
Recipe Summary
Serves: 2 to 4
Prep Time: 10 minutes
Cook Time: 15 to 20 minutes
Best For: breakfast, brunch, breakfast-for-dinner, leftover makeover
Ingredients
- 2 to 3 cups cooked potatoes, diced or chopped
- 1 tablespoon olive oil
- 1 to 2 tablespoons Beau’s Original Taco Seasoning
- 1 to 2 tablespoons butter
- 4 eggs
- salt and pepper, if needed
Optional
- black beans
- sliced avocado
- shredded cheese
- chopped green onion
- sour cream or plain Greek yogurt
- hot sauce
Instructions
1. Season the potatoes
Toss the cooked potatoes with the olive oil and taco seasoning until evenly coated.
2. Crisp them in the skillet
Heat a large skillet over medium to medium-high heat. Add the potatoes in an even layer and cook until browned and crisp at the edges, turning as needed.
3. Finish with butter
Add the butter near the end and toss once more so the potatoes pick up a little extra richness as they finish.
4. Cook the eggs
Make a few spaces in the skillet and crack in the eggs, or cook the eggs separately if you want more control over doneness.
5. Serve
Once the eggs are cooked the way you like, serve hot with any toppings you want to add.
Why This Works
Leftover potatoes already give you a head start, which helps stretch the meal without much extra cost. The seasoning brings warmth, color, and depth, while the eggs turn it into something filling enough to carry breakfast, brunch, or dinner.
Kitchen Notes
Roasted potatoes are especially good here, but boiled or baked potatoes work too.
If the potatoes start to stick before they brown properly, lower the heat a bit and add a little more butter.
Kitchen Variations
- add black beans to stretch the skillet further
- melt cheese over the top at the end
- use sweet potatoes for a different version
- tuck everything into warm tortillas
- add leftover sausage or shredded chicken
