These turkey meatballs combine a light, seasoned base with a melted cheese center. The result is a balanced dish with a crisp exterior and a soft, flavorful interior.

They work well for a sit-down meal or can be served in smaller portions for gatherings.

Ingredients

Meatballs

  • 1/2 lb lean ground turkey
  • 1 egg yolk
  • 2 tbsp Italian breadcrumbs
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp kosher salt
  • Black pepper, to taste
  • 1 tsp Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile Seasoning
  • Mozzarella cheese cubes (for stuffing)
  • 1/4 cup olive oil (for cooking)
  • 1 cup marinara sauce
  • Parmesan cheese, for serving
  • Microgreens or parsley, for garnish

Breading

  • 1/4 cup all-purpose flour
  • 1/4 cup panko breadcrumbs
  • 1/4 cup Italian breadcrumbs
  • 2 tbsp Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile Seasoning
  • 1 egg
  • Kosher salt and black pepper, to taste

Directions

  1. Make meatballs: In a bowl, combine turkey, egg yolk, breadcrumbs, and seasonings. Mix gently until combined.
  2. Form into 2 large meatballs. Press an indentation into each, add mozzarella cubes, and seal.
  3. Place meatballs in the freezer for 15 minutes to firm up.
  4. Prepare breading: Set up three bowls—flour, egg wash (egg + water), and breadcrumb mixture with seasoning.
  5. Coat each meatball in flour, then egg wash, then breadcrumbs. Return to freezer for another 15 minutes.
  6. Preheat: Heat oven to 350°F and prepare a baking sheet.
  7. Heat oil in a skillet to about 350°F. Shallow fry meatballs, turning until golden on all sides.
  8. Transfer to baking sheet and finish in oven for 20–25 minutes.
  9. Warm marinara sauce separately.
  10. Serve meatballs with marinara, Parmesan, and garnish.
