Chorizo Dirty Rice

Ingredients
- 1/2 lb ground turkey
- 2 tbsp Shawhan Farms Chorizo Seasoning
- 2 tbsp light butter
- Cooking spray
- 1/2 tsp kosher salt
- 1 bay leaf
- 1/4 cup onion, chopped
- 1/4 cup celery, chopped
- 1/4 cup bell pepper (red, yellow, or orange), chopped
- 1 garlic clove, finely minced
- 1 cup chicken stock
- 1 cup instant whole-grain brown rice
- 1/2 cup frozen corn
- 1/2 cup frozen peas
Directions
- In a pot of simmering water, cook the corn and peas for 2 minutes. Drain and set aside.
- Spray a large skillet with cooking spray. Add 1 tablespoon butter, ground turkey, 1 tablespoon chorizo seasoning, and the bay leaf. Cook while breaking up the meat until fully cooked, about 3–5 minutes.
- Add onion, celery, and bell pepper. Sprinkle with the remaining tablespoon of chorizo seasoning. Cook until vegetables begin to soften, about 2 minutes. Add garlic and cook for 1 minute.
- Add chicken stock and salt, then bring to a boil. Stir in rice and return to a boil. Cover and cook for 5 minutes, until liquid is absorbed.
- Add cooked corn and peas along with the remaining tablespoon of butter. Stir to combine, cover, and let sit for another 5 minutes.
- Serve as a side with chicken or fish, or enjoy on its own as a light meal.
