Ingredients

  • 1/2 lb ground turkey
  • 2 tbsp Shawhan Farms Chorizo Seasoning
  • 2 tbsp light butter
  • Cooking spray
  • 1/2 tsp kosher salt
  • 1 bay leaf
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup bell pepper (red, yellow, or orange), chopped
  • 1 garlic clove, finely minced
  • 1 cup chicken stock
  • 1 cup instant whole-grain brown rice
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas

Directions

  1. In a pot of simmering water, cook the corn and peas for 2 minutes. Drain and set aside.
  2. Spray a large skillet with cooking spray. Add 1 tablespoon butter, ground turkey, 1 tablespoon chorizo seasoning, and the bay leaf. Cook while breaking up the meat until fully cooked, about 3–5 minutes.
  3. Add onion, celery, and bell pepper. Sprinkle with the remaining tablespoon of chorizo seasoning. Cook until vegetables begin to soften, about 2 minutes. Add garlic and cook for 1 minute.
  4. Add chicken stock and salt, then bring to a boil. Stir in rice and return to a boil. Cover and cook for 5 minutes, until liquid is absorbed.
  5. Add cooked corn and peas along with the remaining tablespoon of butter. Stir to combine, cover, and let sit for another 5 minutes.
  6. Serve as a side with chicken or fish, or enjoy on its own as a light meal.
