Dap's Crispy Chicken and Waffles

Ingredients

2 pounds chicken, cut into pieces

2 eggs

1 cup milk

1 cup all purpose flour

1 tsp garlic powder

1 tsp onion powder
-
1 tsp paprika
-
1 tsp seasoned salt + pepper

2 tsp Dap’s Blackened Seasoning

1/4 cup maple syrup

3-4 drops of hot sauce (or to taste)

2 cups waffle mix
-
1 + 1/4 cup water
-
roughly 2 cups vegetable oil (for frying)

2 tbsp butter, for topping
Directions
Rinse the chicken pieces with cold water and pat down with paper towels.
- In a shallow bowl, beat the eggs with the milk. Soak the chicken in the milk mixture for 5 to 10 minutes.
- Combine flour, garlic powder, onion powder, paprika, seasoned salt, pepper, and cajun seasoning in a larger bowl and mix together.
- While chicken is soaking, whisk together maple syrup and hot sauce to desired heat level.
- To make waffle mix, we recommend following directions on the waffle-mix box to achieve your preference of waffles. We used Hungry Jack’s complete waffle and pancake mix, just add water.
- While waffles are cooking, pour oil into a medium frying skillet and heat to 350 degrees F. Take chicken from egg/milk mixture and coat thoroughly with flour mix.
- Place flour-coated chicken into skillet. Be sure not to overcrowd the skillet with too many chicken pieces at a time.
- Fry for several minutes, turn over chicken once until golden brown and cooked through.
- Shake off excess oil and drain on a cooling rack with paper towels under.
- Top chicken with more cajun seasoning to desired taste.
- Combine chicken, waffles, and maple syrup topped with butter on a plate and enjoy!
