Ingredients

1 (4 pound) whole chicken

1 head garlic, cut in half crosswise

4 tablespoons butter, melted

1 red onion cut into wedges

2 tablespoons of Shawhan Farms poultry seasoning

1 cup of baby carrots

2 garlic cloves, grated
-
1 tsp. Paprika

Salt and pepper

1/2 cup chicken broth
-
2 cups Yukon gold potatoes, cut in halve
Directions
Preheat the oven to 450 degrees
Rub the chicken with melted butter, salt, pepper and paprika
Season the chicken cavity with generous salt, pepper and Shawhan Farms poultry seasoning. Stuff the cavity with onion wedges, halved garlic head, thyme and rosemary sprigs. Set aside.
Place the potatoes, carrots and remaining onion in a Dutch oven , season with salt, pepper and olive oil.
Pour in the chicken broth. Place the chicken, breast side up and cover the Dutch oven with the lid.
Roast the chicken for 40 minutes, covered.
Uncover and roast for additional 20-30 minutes until internal temperature reaches 165° (thickest part of the chicken).
Broil the chicken for a few minutes to get the golden brown skin.
