Ingredients
For the Salad
- 3 cups Romaine lettuce, chopped
- 1/2 cup Parmesan cheese, grated or shaved, plus more for garnish
- 1 cup Lemon Pepper Croutons (see below)
- Zest of 1 lemon
- Kosher salt and freshly ground black pepper to taste
For the Vinaigrette
- 2 tbsp olive oil
- Juice of 1 large lemon
- 1/2 tsp Dijon mustard
- 1/4 tsp kosher salt
- 10 grinds of freshly ground black pepper
For the Croutons
- 1 cup day-old bread cubes
- Olive oil or canola oil cooking spray
- 1 tbsp Shawhan Farms Gourmet Parmesan Inspirations Lemon Pepper Seasoning
- 1/2 tsp dried oregano
- 1/4 tsp kosher salt
- 10 grinds of freshly ground black pepper
Directions
Make the Croutons
Preheat the Broiler
- Set your broiler to high.
Prepare the bread Cubes
Place the bread cubes in a bowl. Spray with cooking spray and toss to coat. Spray again to ensure all cubes are lightly coated.
Season the Bread Cubes
Sprinkle the bread cubes with the lemon pepper seasoning, dried oregano, kosher salt, and black pepper. Toss well to evenly distribute the seasonings.
Broil the Croutons
Spread the seasoned bread cubes on a parchment-lined baking sheet.
