Ingredients
For the Shrimp
- 1 lb. shrimp, peeled and deveined
- 3 tablespoons Shawhan Farms Lemon Pepper Seasoning, divided
- 1/2 cup flour
- 1/2 cup cornmeal
- 1/4 cup grated Parmesan cheese
- 2 cups buttermilk
- Canola oil for frying
- French rolls
- Lettuce, shredded
- Pickles, sliced
- Tomatoes, sliced
Lemon Pepper Parmesan Remoulade
- 1/2 cup mayonnaise
- 1 teaspoon mustard
- 2 teaspoons paprika
- 1 teaspoon pickle juice
- 1 tablespoon Shawhan Farms Zesty Lemon Pepper Seasoning
- 1 tablespoon diced pickles
- 1/2 tablespoon diced capers
- 1 garlic clove, minced
- Dash of hot sauce
Directions
Prepare the Remoulade
In a small bowl, mix together the mayonnaise, mustard, paprika, pickle juice, Shawhan Farms Zesty Lemon Pepper Seasoning, diced pickles, diced capers, minced garlic, and a dash of hot sauce.
Refrigerate for at least 30 minutes to allow the flavors to meld.
Season and Bread the Shrimp
Season the shrimp with 1 tablespoon of Shawhan Farms Lemon Pepper Seasoning.
In a shallow bowl, combine the flour, cornmeal, grated Parmesan cheese, and the remaining 2 tablespoons of Shawhan Farms Lemon Pepper Seasoning.
Dip each shrimp in the buttermilk, then dredge in the flour-cornmeal mixture, pressing to adhere. Place the breaded shrimp on a plate and refrigerate for 15 minutes to help the coating set.
Fry the Shrimp
Heat canola oil in a deep skillet or fryer to 350°F (175°C).
Fry the shrimp in batches until golden brown and crispy, about 2 minutes per batch. Avoid overcrowding the skillet.
Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
Assemble the Po' Boys
Slice the French rolls and spread a generous amount of the lemon pepper Parmesan remoulade on each side.
Layer the bottom half of each roll with lettuce, pickles, and tomato slices.
Top with the crispy fried shrimp.
Close the sandwiches and serve immediately.
