Ingredients
- 2 golden potatoes, diced
- ½ yellow onion, diced
- 1 lb chicken breasts or thighs
- 3 bay leaves
- 3-4 tbsp adobo seasoning
- 3-4 tbsp garlic powder
- Salt and pepper to taste
- Shredded Monterey Jack cheese
- Corn tortillas

Prepare the Filling
Boil the Chicken
In a large pot, bring heavily salted water to a boil.
Add 3 bay leaves, 3-4 tbsp adobo seasoning, and 3-4 tbsp garlic powder.
Add the chicken breasts or thighs and boil for 30-40 minutes until the chicken is fully cooked.
Remove the chicken from the pot, let it cool slightly, and shred it using two forks.
Sauté the Vegetables
In a large skillet, sauté the diced golden potatoes and diced yellow onion over medium heat until the potatoes are tender and the onions are translucent, about 10-15 minutes.
Season the vegetables with salt, pepper, and a pinch of garlic powder.

Simmer the Mole
In a medium saucepan, combine 1 part mole negro blend with 2 parts water.
