- 2 Tbsp. panko bread crumbs
- ½ cup chicken stock, room temperature
Directions
Preheat the oven
- Set your oven to 350 degrees F (175 degrees C)
Prepare the filling
In a large non-stick skillet, spray cooking spray and add 1 tsp of olive oil. Heat over medium-high heat.
Add the chopped mushroom stems, red bell pepper, green onions, garlic, and celery. Stir to combine and cook for about 2 minutes to soften the vegetables.

Remove the filling from the skillet and transfer it to a bowl to cool.
Combine the ingredients
- Once the filling has cooled, add the egg, 1/3 cup of Parmesan cheese, and the remaining 1 Tbsp of truffle-infused seasoning. Mix until everything is well combined.
Stuff the mushrooms
Place the cleaned mushroom caps in a small casserole dish.
Fill each mushroom cap with an equal amount of the sausage and vegetable mixture.
Sprinkle the tops with panko bread crumbs and additional Parmesan cheese.
Bake the mushrooms
Carefully pour the chicken stock into the casserole dish around the mushrooms.
Cover the dish with foil and bake for 25 minutes.
