Savory Breakfast Sandwich with Pep's Chicken Rub

Ingredients
- 1 tablespoon Pep's Chicken Rub
- 2 slices of your favorite bread (such as sourdough, whole grain, or a soft roll)
- 1 large egg
- 2 slices of bacon
- 1 slice of cheese (cheddar, Swiss, or your favorite type)
- 1 tablespoon butter or oil for cooking
Directions
Cook the Bacon: In a skillet over medium heat, cook the bacon slices until they are crispy and golden brown. This usually takes about 4-5 minutes per side.
Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Leave a little bacon grease in the skillet for cooking the egg.
Prepare the Egg: Sprinkle the egg with a pinch of Pep's Chicken Rub. In the same skillet used for the bacon, add a little butter or oil if needed and crack the egg into the skillet.
Cook the egg to your preferred doneness. For a runny yolk, cook for about 2-3 minutes on each side; for a firmer yolk, cook a bit longer. Once the egg is cooked, set it aside.
Assemble the sandwich: Toast the bread slices until they are golden brown.
On one slice of the toasted bread, place the cooked bacon strips. Add the cooked egg on top of the bacon.
Sprinkle a little more of Pep's Chicken Rub over the egg for extra flavour. Place the cheese slice on top of the egg, allowing it to melt slightly from the heat of the egg and bacon. Top with the second slice of toasted bread.
Serve: Cut the sandwich in half if desired, and serve immediately while it's hot and the cheese is melty.
