This breakfast sandwich keeps things simple while still bringing in bold flavor. Crispy bacon, a cooked egg, and melted cheese come together with a light layer of seasoning for a balanced, savory start to the day.

It’s quick to make and easy to adjust based on what you have on hand, making it a reliable option for busy mornings.

Ingredients

  • 1 tbsp Pep's Chicken Rub
  • 2 slices bread (sourdough, whole grain, or a soft roll)
  • 1 large egg
  • 2 slices bacon
  • 1 slice cheese (cheddar, Swiss, or preferred)
  • 1 tbsp butter or oil

Directions

  1. Cook bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and reserve a small amount of bacon fat in the pan.
  2. Season the egg lightly with Pep's Chicken Rub. Cook in the same skillet with a bit of butter or oil until desired doneness.
  3. Toast the bread until golden.
  4. Layer bacon and egg on one slice of bread. Sprinkle a small amount of seasoning over the egg if desired.
  5. Add cheese on top and allow it to melt slightly from the heat.
  6. Top with the second slice of bread, slice if desired, and serve warm.
