This "Poor Man's Carbonara" is an unauthentic twist on the classic dish that delivers big flavor with simple, affordable ingredients. By incorporating pantry staples like bacon, garlic, and Parmesan, alongside budget-friendly chicken and Shawhan Farms Chimichurri seasoning, this recipe is a great way to enjoy a gourmet-tasting meal without breaking the bank.
The Chimichurri blend adds herbal flavors like oregano and parsley, and cooking essentials like garlic, onion, and paprika. The blend also brings unique flavors to the dish including crushed aleppo chiles, red wine vinegar, and tomatillo.
Ingredients

Your favorite pasta

2 slices thick-cut bacon, chopped

2 cloves garlic, minced

2 chicken breasts, cubed

1/2 cup white wine, for deglazing

Chimichurri seasoning by Shawhan Farms, to taste

1 cup heavy cream
-
Salt and pepper, to taste

1/2 cup Parmesan cheese, grated (plus extra for garnish)
Directions
Boil your favorite pasta in salted water according to package instructions. Reserve 1/2 cup of the pasta water before draining
In a large skillet over medium-high heat, pan-fry the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan
Add the minced garlic to the skillet and cook until fragrant. Add the cubed chicken breasts and cook until browned and fully cooked, about 6–8 minutes.
Deglaze the pan. Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2–3 minutes to reduce slightly.
Sprinkle the chicken mixture with Shawhan Farms Chimichurri seasoning. Stir to combine. Lower the heat to medium and add the heavy cream. Season with salt and pepper to taste. Stir gently to create a smooth sauce.
Turn the heat to low and stir in the grated Parmesan cheese until melted and fully incorporated.
Add the cooked pasta to the skillet and toss to coat it evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to achieve the desired consistency.
Plate the pasta, garnish with extra Parmesan cheese if desired, and serve warm.
