Cozy up with a bowl of soup filled with hearty beans and healthy chicken. Taco soup is versatile and easy to make, it's sure to please picky eaters!
Ingredients

1 white or yellow onion, diced

1 bell pepper, diced

3-4 cups low sodium bone chicken broth

5 garlic cloves, diced

8 oz can black beans, drained and rinsed

8 oz can pinto beans, drained and rinsed
-
8 oz can diced tomatoes, drained

Corn kernels, frozen or canned and drained

8 oz sour cream
-
2-3 large chicken breasts, fresh or frozen
-
2 tbsp Shawhan Farms Taco Seasoning
-
1 tsp kosher salt
-
Black pepper to taste

Grated cheddar cheese
Directions
Place all ingredients except the sour cream and cheddar cheese into a slow-cooker, cover and cook on low for 5-6 hours.
Before serving, remove the chicken breast and shred with a fork. Mix shredded chicken back into the slow-cooker, and add in the sour cream, mixing to combine fully.
Cover for a few minutes to let the sour cream fully melt and incorporate. Top with grated cheddar cheese and serve with tortilla chips.

Swap chicken broth for vegetable broth, and omit the meat to make this dish vegetarian.
