  1. Wash, peel, and grate the potatoes. Place them in a cheesecloth and wring out as much moisture as possible.
  2. In a large bowl, combine grated potatoes, onion, egg, flour, seasoning of choice, baking powder, and salt. Mix until well combined.
  3. Heat about 1/2 inch of oil in a Dutch oven or heavy-bottomed pan over medium-high heat.
  4. Scoop about 1/4 cup of the mixture and form into patties about 1/2 inch thick.
  5. Carefully place patties into the hot oil and fry for 2–3 minutes per side, until golden brown and crisp.
  6. Transfer to a rack or paper towels to drain excess oil.
  7. Serve warm with sour cream or applesauce.
