Jamaican Jerk Chicken Thighs

Chicken thighs are well suited to the bold chile, allspice, and herb flavors of jerk seasoning. Use bone-in or boneless, skin-on or skinless thighs, then follow the timing for the cut you have.

  1. Pat the chicken dry. Combine the seasoning, oil, and lime juice in a large bowl. Add the thighs and turn until evenly coated.
  2. Cover and refrigerate for at least 30 minutes. For stronger flavor, marinate for several hours.
  3. Heat the oven to 425°F. Arrange the chicken in a single layer on a rimmed baking sheet or in a baking dish. Place skin-on thighs skin side up.
  4. Roast until the thickest part reaches 165°F. Begin checking boneless thighs after 20 minutes and bone-in thighs after 30 minutes. Broil skin-on pieces for 1 to 2 minutes at the end if you would like more browning.
  5. Rest the chicken for 5 minutes, then serve with lime wedges and scallions or cilantro, if using.

Tips and Variations

Use the grill. Grill the thighs over medium heat, turning as needed, until the thickest part reaches 165°F. Move them to a cooler section if the outside browns before the chicken is cooked through.

Adjust the seasoning amount. Two tablespoons gives 2 pounds of chicken a generous coating. Use a little less for milder flavor or add another teaspoon for more heat and spice.

Make it a sheet-pan dinner. Toss bell peppers, red onion, zucchini, or small pieces of sweet potato with a little oil and a light shake of the jerk seasoning before arranging them around the chicken. Keep enough space between the pieces for browning, and cut sweet potatoes small enough to cook in the same time as the thighs.

Cook extra for another meal. Slice the remaining chicken for tacos, sandwiches, rice bowls, salads, or wraps.

Serving Ideas

Serve the jerk chicken with coconut rice, black beans, grilled corn, roasted sweet potatoes, or cabbage slaw. Mango, pineapple, or avocado are good choices alongside the chile heat and warm spices.
