Ingredients

For the fritters:

  • 1 cup cottage cheese
  • 1 egg
  • 1/2 cup flour
  • 2 tablespoons truffle parm blend
  • 1 green onion, thinly sliced
  • 1/2 teaspoon black pepper
  • Oil for pan-frying

For the bowls:

  • 2 cups cooked rice
  • 2 cups fresh spinach
  • Optional: lemon wedges

For the drizzle:

  • 1/4 cup plain yogurt
  • 1 teaspoon lemon juice
  • A pinch of the seasoning

Use whatever vegetables you have in the fridge, freezer, or pantry. The bowl works with almost anything.

Instructions

  1. Make the fritter batter: In a medium bowl, stir together the cottage cheese, egg, flour, the truffle parm blend, green onion, and pepper. The mixture will be thick.
  2. Pan-fry the fritters: Warm a thin layer of oil in a skillet over medium heat. Scoop the batter in small portions and flatten slightly. Cook until golden on both sides, about 3 to 4 minutes per side. Transfer to a plate.
  3. Use the same pan for the spinach: Pour off any excess oil, leaving just a thin coating. Add the spinach to the warm pan and cook until wilted. Season lightly if needed.

  5. Assemble the bowls: Add warm rice to each bowl, top with spinach, tuck in a few fritters, and spoon the drizzle over the top. Taste and add a little more seasoning if you want a deeper finish.
