Smoky Chicken Skewers with Peach Salsa

When the weather’s warm and you don’t want to overthink dinner, skewers are a perfect solve: easy to prep, quick to cook, and endlessly customizable. These smoky chicken skewers are seasoned with Shawhan Farms Buck's Best Sweet & Spicy BBQ Seasoning for that deep, sweet heat—and paired with a juicy peach salsa that screams summer.

Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon Shawhan Farms Buck's Best Sweet & Spicy BBQ Seasoning
  • 2 fresh peaches, diced
  • 1/4 cup finely chopped red onion
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lime juice
  • Salt to taste

Instructions:

  1. In a bowl, toss chicken pieces with olive oil and BBQ seasoning. Let marinate for at least 30 minutes.
  2. Thread chicken onto skewers.
  3. Preheat grill to medium-high. Grill skewers for 8–10 minutes, turning occasionally, until cooked through and slightly charred.
  4. While grilling, combine peaches, red onion, cilantro, lime juice, and a pinch of salt to make salsa.
  5. Serve skewers hot with peach salsa on the side or on top.

Serving Suggestions:

  • Pair with grilled corn brushed with lime butter and sprinkled with cotija cheese.
  • Serve over a bed of couscous or quinoa with fresh herbs.
