Spicy BBQ Shrimp Skillet

Serves: 4 (as a main) or 6–8 (as an appetizer)
Time: 20 minutes

Ingredients:

  • 1 lb large raw shrimp, peeled and deveined
  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 small red onion, sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 teaspoons apple cider vinegar
  • 1 ½ tablespoons Shawhan Farms Buck’s Spicy BBQ Seasoning
  • Salt to taste
  • Optional: fresh cilantro, lime wedges, yogurt sauce or slaw for serving

Instructions:

  1. Make the glaze: In a small bowl, mix lime juice, honey, vinegar, and Buck’s Spicy BBQ Seasoning. Set aside.
  2. Sear the veggies: Heat 1 tbsp olive oil in a large skillet over medium-high. Add sliced peppers and onion. Cook 5–6 minutes until just softened and lightly charred. Remove to a plate.
  3. Cook the shrimp: Add remaining 1 tbsp oil to the pan. Add shrimp in a single layer and season lightly with salt. Cook 1–2 minutes per side until pink and just cooked through.
  4. Glaze & toss: Return veggies to the pan. Pour in glaze and stir quickly to coat. Let it bubble for 1–2 minutes until thickened slightly.
  5. Serve: Transfer to a platter or serve straight from the skillet. Garnish with lime wedges and cilantro if desired.
