Sweet and Spicy Sheet-Pan Chicken and Sweet Potatoes

How do you make sheet-pan chicken taste less repetitive? A sweet-spicy mole blend gives chicken and sweet potatoes a different flavor profile than the usual roast-pan dinner.

This is a budget-friendly sheet-pan meal built from boneless chicken pieces, sweet potatoes, and pantry staples. Chicken and black beans bring inexpensive nutrition, and the mole blend brings the sweet heat and depth that gives the whole pan more flavor.

Ingredients

  • red onion wedges
  • bell pepper strips
  • zucchini
  • cauliflower

Instructions

1. Heat the oven
Heat the oven to 425 F. Line a sheet pan if you want easier cleanup.

2. Season the chicken and sweet potatoes
Add the chicken and sweet potatoes to a large bowl or directly to the pan. Drizzle with most of the oil, add the Shawhan Farms Oaxacan Mole Manchamanteles Sauce Starter & Seasoning, and toss until evenly coated. Add salt and pepper if needed.

3. Add the vegetables
If you are using onion, peppers, zucchini, or cauliflower, toss them with a little oil and add them to the pan.

4. Roast
Spread everything into a single layer. Roast until the chicken is cooked through and the sweet potatoes are tender and browned at the edges.

5. Add the beans near the end
Add the black beans during the last few minutes so they heat through without drying out.

6. Serve
Serve hot as-is, or spoon it over rice, noodles, or pasta.
