This crispy Parmesan asparagus brings texture and flavor together in a way that makes vegetables feel like more than a side. Coated in a golden breadcrumb crust and finished with a savory Parmesan seasoning, it delivers crunch on the outside while staying tender inside.

Paired with a simple, creamy dipping sauce, it’s an easy way to add something a little more interesting to the table without adding complexity.

Dipping Sauce

  • 3 tbsp fat-free Greek yogurt
  • 3 tbsp light mayonnaise
  • 1 tbsp Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile
  • Pinch of kosher salt
  • Freshly ground black pepper

Directions

  1. Make the dipping sauce: In a small bowl, combine Greek yogurt, mayonnaise, seasoning, salt, and pepper. Refrigerate until ready to serve.
  2. Set up breading station: In one bowl, whisk eggs with a splash of water, salt, and pepper. In another bowl, mix panko, Italian breadcrumbs, seasoning, salt, and pepper.
  3. Heat oil: Add canola oil to a skillet until it reaches about halfway up the sides. Heat to 350°F.
  4. Bread asparagus: Dip each asparagus spear into the egg mixture, then coat thoroughly in the breadcrumb mixture.
  5. Fry asparagus: Cook in batches for 2–3 minutes per side until golden brown and crisp.
  6. Drain: Transfer to a paper towel-lined plate and lightly season with salt. Keep warm in a low oven if needed.
  7. Serve: Plate and serve with dipping sauce.
