Ingredients
Asparagus
- 1 bunch asparagus, trimmed
- 2 eggs
- 1 cup panko breadcrumbs
- 1 cup Italian breadcrumbs
- 2 tbsp Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile
- Kosher salt and black pepper, to taste
- Canola oil, for frying
Dipping Sauce
- 3 tbsp fat-free Greek yogurt
- 3 tbsp light mayonnaise
- 1 tbsp Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile
- Pinch of kosher salt
- Freshly ground black pepper
Directions
- Make the dipping sauce: In a small bowl, combine Greek yogurt, mayonnaise, seasoning, salt, and pepper. Refrigerate until ready to serve.
- Set up breading station: In one bowl, whisk eggs with a splash of water, salt, and pepper. In another bowl, mix panko, Italian breadcrumbs, seasoning, salt, and pepper.
- Heat oil: Add canola oil to a skillet until it reaches about halfway up the sides. Heat to 350°F.
- Bread asparagus: Dip each asparagus spear into the egg mixture, then coat thoroughly in the breadcrumb mixture.
- Fry asparagus: Cook in batches for 2–3 minutes per side until golden brown and crisp.
- Drain: Transfer to a paper towel-lined plate and lightly season with salt. Keep warm in a low oven if needed.
- Serve: Plate and serve with dipping sauce.
