The Ultimate Cowboy Queso

This cowboy queso brings together hearty ingredients with a smooth, creamy base. Ground beef, beans, and tomatoes with green chiles build depth, while melted cheeses create a rich texture that holds up for dipping.

It’s an easy, crowd-friendly option that works just as well for game day as it does for casual gatherings.

Ingredients

  • 1 lb ground beef, browned and drained
  • 2 cans tri-color beans, drained
  • 1 can crushed tomatoes with green chiles
  • 8 oz cream cheese
  • 3 tbsp Shawhan Farms Chili Seasoning
  • 1 cup shredded mozzarella
  • Chives and cilantro, to taste

Directions

  1. Brown ground beef in a skillet and season with chili seasoning. Drain excess grease.
  2. In a cast iron pan or baking dish, combine beef, beans, tomatoes, cream cheese, seasoning, and mozzarella.
  3. Place in oven or smoker at 225°F.
  4. Stir every 5–10 minutes until heated through and well combined.
  5. Top with additional cheese and a light sprinkle of seasoning if desired.
  6. Broil briefly until the top is melted and lightly browned.
  7. Let cool for about 5 minutes, then garnish with chives and cilantro.

Recipe Notes

  • Serve with tortilla chips for dipping.
  • Optional toppings include sour cream, avocado, or green onions.
  • Can be kept warm on low heat for serving.
