Pair It with Chicken, Fish, or Pork
Roast chicken thighs, grilled pork chops, salmon, shrimp, and firm white fish all pair well with chimichurri. Keep the seasoning on the meat or fish fairly simple, then spoon the sauce over it after cooking so you still get all that good browning from the grill, oven, or skillet.
It is also a great way to add zing to leftover chicken. Slice it for lunch, warm it if you like, and serve it with chimichurri instead of trying to turn yesterday’s dinner into a completely new recipe.
