This is a clean, vegetarian kimchi base made with Gochugaru chiles for that signature flavor and color. It gives you the core of traditional kimchi—garlic, heat, and depth.  Ours does not contain fish sauce or shrimp paste.

Simple Kimchi Instructions

Shred Napa cabbage, carrots, and daikon (or vegetables of choice). Toss with salt and let sit a few hours to soften, then rinse and drain. Stir the Kimchi Starter with hot water, mix into the vegetables, and pack into jars. Let it sit at room temperature for about a day, then refrigerate.
